Visiting with good friends is like coming home. Today we are in the “Frauenseestube” hut with hosts Kevin and Max Matzner. These are two of ROLF Spectacles’ neighbors.
On the shore of the idyllic Frauensee, a 40m deep lake amid stunning natural scenery, we’ve been invited to relax for some time away from the crowds. Here we peek over the shoulders of twin brothers Kevin and Max while they bake their Kaiserschmarrn, a cut-up and sugared pancake. They were kind enough to give us their recipe for this sweet Tyrolean traditional dish.
In much the same way Kevin and Max combine natural ingredients and passionate culinary art to prepare traditional delicacies, ROLF Spectacles combines fine natural materials with traditional craftsmanship to produce beautiful eyewear.
3 eggs, 2 cl Rum (80%), 170 g of flour, 90 g sugar, 60 g butter, 1 pinch of salt, 1 dash of vanilla, lemon zest, 350 ml milk, powdered sugar
Preheat the oven to 180 ° C.
In a bowl, mix together the flour, sugar, rum, salt, vanilla, yolks until just combined.
Add the lemon zest and milk to the bowl and stir to a smooth, thick batter.
In another bowl, beat the egg whites until stiff peaks form and then fold in under the thick batter.
Use the butter to grease a large shallow oven-safe pan.
Slowly pour the batter into the pan and cook on both sides.
Place the pan into the preheated oven. Bake for 10-12 minutes until done.
Remove the pan from the oven and shred the finished dough with two forks into irregular pieces.
Place the pancake onto a plate and sprinkle with powdered sugar.
Enjoy with applesauce.
